1 1/2 cups white spelt flour
1/2 cup rolled quick oats
1/3 cup granular fructose or sugar
2 1/4 tsps baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 tsp soy oil
1 tsp vanilla
1 cup pureed very ripe banana
1/2 cup blueberries
Apple juice
In a large bowl, mix dry ingredients. In another bowl, mix oil, vanilla, and banana puree. Mix banana-pear mixture into dry mixture. Stir in apple juice until you get a thick, cake-batter-type mixture (not too wet or too dry). Do not overmix. Fold in blueberries. Pour into well-sprayed muffin tins, filling 3/4 full. Bake at 350 F until a toothpick inserted into center of a muffin comes out dry (20 minutes or thereabouts).
