4 egg whites
1 whole free range or organic egg
1/3 cup oatmeal or spelt flakes (dry)
1/3 cup frozen mixed berries
Cinnamon
1 Tbsp ground flax meal
Whisk all above ingredients and cook over medium heat in a non-stick spray coated frying pan and cover, cooking until cooked throughout (about 10 minutes). Flip and cook for another minute or two. Top with real maple syrup (don’t go overboard). YUM! My favorite breakfast.
NOTE: To save on cooking time, use thawed or fresh berries rather than frozen.
