Coconut Lemon Concoction

This is reminiscent of a creamy coconut/lemon dessert.

125 ml egg whites (1 carton)
1 package instant Cream of Wheat
1 tbsp shredded natural coconut
Squeeze juice of 1/2 lemon
2 tsp Splenda
2 tbsp Soy Milk
Dollop of plain yogurt of kefir

Stir egg whites, Cream of Wheat, coconut, lemon juice, Splenda and soy milk together. Microwave on high for 90 seconds. Stir. It should be a creamy consistency. Keep stirring until it thickens a bit. Add a dollop of yogurt or kefir on top. Enjoy.
