Plum Crumble with Soft Yogurt Cheese

This is a lighter version of traditional apple crisp. I use a mixture of yellow, red and purple plums.

2 lb. fresh, ripe plums
1/2 cup all purpose flour
1/2 cup brown sugar
1/2 tsp cinnamon
1/4 tsp nutmeg ¼ cup melted unsalted butter
1/2 cup rolled oats

Half plums, remove pits and cut into quarters. Place in bottom of oiled 9” square baking pan. Combine flour, sugar, cinnamon and nutmeg. Drizzle butter over top of mixture and combine. Stir in oats. Sprinkle topping evenly over plums and bake in preheated 350 degree oven for 45-50 minutes.

Soft Yogurt Cheese

Put a coffee filter or cheese cloth on bottom of a strainer. Put strainer over top of a bowl. Place 1 cup organic plain yogurt or kefir into the filter, cover with plastic wrap and refrigerate for 3 hours. Put a dollop of yogurt cheese on top of plum crumble when serving. It will balance the tartness of the fruit and add a nice creaminess to the dessert. (filtered overnight will make a hard yogurt cheese, similar to cream cheese).
